We went to opening day and used the Elysian Park entrance (off Sunset) and it wasn't bad although we were pretty early. I don't think the Academy road lot is really worth the risk of getting you lost. Basically, figure 1/2 hour plus to get out of the lot (unless you do the stereotypical LA fan thing and leave in the 7th)! Don't do that and if you do don't tell me. Saturday traffic still sucks, but as long as you don't take the I-5 between the 91 and the East LA interchange, you won't get too frustrated. If you need some help getting around SoCal, feel free to call me @ 949-933-4034. I'll be able to help a little more if I know the general area in OC you're staying.
Hey Dan. Unfortunately, I don't think there's any way around the parking issues at Dodger Stadium. The only way to not deal with driving up the hill (for the most part) is to take the shuttle from Union Station. I'm not sure where you're staying, but leave yourself plenty of time to get through the LA traffic if you have to travel any distance. We live down in Orange County and try to leave for the park before 4pm. Our favorite entrance to the parking lot is the Academy Road entrance. It's a little smaller area for parking and the crush to get out isn't quite as bad as the bigger lots. Olvera Street has a couple of Mexican restaurants, if you wanted to catch a little LA flavor before the game. Have a great trip.
